Crockpot Mississippi Pot Roast

This Crockpot Mississippi Pot Roast is a flavorful, tender, and easy-to-make slow-cooked beef dish seasoned with ranch dressing mix, au jus gravy mix, and pepperoncini peppers. Cooked low and slow, it yields a juicy, melt-in-your-mouth roast perfect for a cozy family dinner with minimal effort.

Ingredients

Scale

Main Ingredients

  • 34 lb chuck roast
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 1/2 cup butter (4 sticks or approximately 8 tbsp)
  • 68 pepperoncini peppers
  • 1/2 cup beef broth or water

Optional Ingredients & Variations

  • Extra pepperoncini peppers or dash of cayenne (for spicy kick)
  • 23 cloves minced garlic or 1 tsp garlic powder (for garlic lovers)
  • 1 packet Italian dressing mix (substitute for ranch seasoning)
  • Potatoes, carrots, or onions (added to crockpot for vegetable boost)
  • Low sodium seasoning packets and broth (for low sodium option)

Instructions

  1. Prep the Roast: Pat your chuck roast dry with paper towels and trim excess fat if desired. This helps the seasoning stick better and, if you choose, allows you to sear it beforehand for added flavor and texture.
  2. Layer the Seasonings: Evenly sprinkle the ranch seasoning mix and au jus gravy mix over all sides of the meat to create the classic flavor base of the recipe.
  3. Add Butter and Peppers: Place sticks of butter on top of the seasoned roast and scatter the pepperoncini peppers around it. Their juices will infuse the meat with tangy heat while cooking.
  4. Pour in Broth: Pour approximately 1/2 cup of beef broth or water into the crockpot to keep the roast moist without making it soggy.
  5. Cook Low and Slow: Cover the crockpot and cook on low for 8 hours or on high for 4-5 hours until the roast is fall-apart tender and richly flavored.
  6. Serve and Enjoy: Once cooking is complete, let the roast rest for 10 minutes, then shred it using two forks. Mix the shredded meat with the flavorful juices in the crockpot and serve with your favorite sides.

Notes

  • Searing the roast before slow cooking adds extra flavor and improves texture but is optional.
  • Don’t skip the butter—it is crucial for rich, silky flavor and moist meat.
  • For extra tang, splash some pepperoncini juice from the jar into the crockpot.
  • Be careful not to overfill the crockpot with liquid to ensure proper braising instead of boiling.
  • Let the roast rest for 10 minutes after cooking to help retain the juices before shredding.
