Instructions

  1. Prepare the chicken and aromatics: Cook and shred your chicken if not already prepared. In a skillet, sauté the chopped onion and minced garlic in a little oil over medium heat until fragrant and translucent. Combine the sautéed aromatics with the shredded chicken, salsa, cumin, chili powder, salt, and pepper; stir to mix well.
  2. Make the creamy sauce: In a bowl, blend the softened cream cheese with sour cream or Greek yogurt and some of the salsa until smooth and creamy, creating the sauce that will bind the casserole.
  3. Assemble the casserole layers: Grease a baking dish. Begin with a layer of tortillas, spread a portion of the chicken mixture over it, then add dollops or drizzle of the creamy sauce on top. Repeat these layers until all ingredients are used, finishing with a generous layer of shredded cheese on top.
