Ingredients

Cheesecake Filling

  • Cream Cheese – 16 oz (softened, room temperature)
  • Granulated Sugar – 3/4 cup
  • Vanilla Extract – 1 teaspoon
  • Sour Cream – 1/2 cup
  • Gelatin – 1 tablespoon (powdered)
  • Cold Water – 1/4 cup (to bloom gelatin)

Fruit and Chocolate

  • Fresh Raspberries – 1 cup
  • Dark Chocolate – 4 oz (melted)

Crust

  • Graham Crackers – 1 1/2 cups (crushed into fine crumbs)
  • Unsalted Butter – 6 tablespoons (melted)

Instructions

  1. Prepare the Crust: Crush graham crackers into fine crumbs and mix thoroughly with melted butter. Press the mixture firmly into silicone dome molds to create a sturdy crust base. Refrigerate the molds to allow the crust to set while preparing the filling.
  2. Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add sugar, vanilla extract, and sour cream, mixing well to combine into a light, fluffy mixture. Bloom the gelatin by sprinkling it over cold water and allowing it to swell for about 5 minutes. Gently melt the bloomed gelatin in a microwave or double boiler, then fold it carefully into the cheesecake filling to provide stability for the domes.
  3. Incorporate Raspberries and Chocolate: Gently fold fresh raspberries into the cheesecake filling, taking care not to crush them. Melt the dark chocolate and swirl it through the filling or layer it partially into each dome to create a dramatic chocolate ripple effect.
  4. Assemble the Domes: Pour the filling evenly into the crust-lined silicone molds, smoothing the tops with a spatula. Refrigerate the domes for several hours or preferably overnight until they are fully firm and set.
  5. Unmold and Serve: Carefully remove the domes from their molds onto dessert plates. For an extra glossy finish, lightly brush the domes with melted chocolate or garnish with fresh raspberries, powdered sugar, or other desired toppings before serving.

Notes

  • Use room temperature cream cheese to ensure a smooth, lump-free filling.
  • Bloom gelatin properly by letting it sit in cold water before melting; this prevents the domes from collapsing after chilling.
  • Select ripe but firm raspberries to avoid excess moisture that can dilute the filling.
  • Chill the domes thoroughly, preferably overnight, for clean, firm dome shapes.
  • Silicone molds are recommended for easy unmolding and maintaining the dome shape.
