For the Crust

  • 200g Digestive Biscuits, crushed
  • 100g Unsalted Butter, melted

For the Filling

  • 600g Cream Cheese, softened
  • 200g Sour Cream
  • 150g Caster Sugar
  • 3 Eggs
  • 150g Dark Chocolate
  • Zest of 2 Fresh Oranges
  • 60ml Fresh Orange Juice
  • 1 tsp Vanilla Extract

Instructions

  1. Prepare the Crust: Start by crushing the digestive biscuits into fine crumbs and combine them with the melted butter. Press this mixture evenly into the base of a 23cm springform pan to form a firm crust. Chill in the refrigerator while preparing the filling.
  2. Melt the Chocolate: Gently melt the dark chocolate over a double boiler or in short bursts in the microwave, stirring frequently to prevent burning. Set aside to cool slightly before adding to the filling.
  3. Mix the Filling: In a large bowl, beat the cream cheese and caster sugar together until smooth and creamy. Add the sour cream, then incorporate the eggs one at a time, mixing well after each addition. Stir in vanilla extract, fresh orange zest, and orange juice. Finally, fold in the melted chocolate gently until fully combined.
  4. Bake the Cheesecake: Pour the creamy filling over the chilled crust and smooth the top with a spatula. Bake in a preheated oven at 160°C (320°F) for 50-60 minutes, or until the edges are set but the center still has a slight jiggle.
  5. Cool and Chill: Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight to fully set and develop complex flavors.
