Ingredients

Scale

Main Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup cocoa powder (preferably Dutch-processed)
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 2 cups granulated sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 large eggs, at room temperature
  • 1 cup milk or buttermilk, at room temperature
  • 2 teaspoons vanilla extract

Optional Ingredients

  • 1 cup chocolate chips or chunks
  • 1/2 cup chopped walnuts or pecans (for nutty twist)
  • 1/2 teaspoon cinnamon or pinch of cayenne pepper (for spicy kick)
  • 1 teaspoon instant espresso powder (for espresso infusion)
  • Ganache or melted fudge for topping

Instructions

  1. Prepare Your Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a large bowl, sift together all-purpose flour, cocoa powder, baking powder, and baking soda to remove lumps and evenly distribute leavening agents.
  3. Cream Butter and Sugar: In a separate bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy, incorporating air for a tender crumb.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract to enhance the chocolate flavor.
  5. Combine Wet and Dry Ingredients Alternately: Gradually add the dry ingredients to the butter mixture alternately with the milk or buttermilk, starting and ending with the dry ingredients. Mix gently to avoid overworking the batter.
  6. Fold in Chocolate Chips (Optional): Carefully fold in chocolate chips or chunks to add pockets of molten chocolate throughout the cake.
  7. Bake: Pour the batter evenly into the prepared pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out with moist crumbs but no raw batter.
  8. Cool and Serve: Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack. Serve warm or at room temperature, optionally adding frosting or toppings of your choice.

Notes

  • Use room temperature eggs and butter for better mixing and a consistent batter.
  • Mix just until ingredients are combined to avoid a tough cake texture.
  • Start testing cake for doneness a few minutes before baking time ends to prevent drying out.
  • Use quality Dutch-processed cocoa powder for rich flavor and deep color.
  • Allow adequate cooling time before frosting to prevent melting or sliding.
