Ingredients

Scale

For the Salmon and Glaze

  • 2 salmon fillets, fresh and skin-on (about 6 oz each)
  • 12 chipotle peppers in adobo sauce, minced (adjust to spice preference)
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • Pinch of salt
  • 1 tablespoon olive oil (for cooking)

For the Rice and Salad

  • 2 cups cooked jasmine or basmati rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Chipotle Honey Glaze: In a small bowl, combine minced chipotle peppers in adobo sauce, honey, lime juice, and a pinch of salt. Whisk until smooth and set aside to let the flavors meld.
  2. Cook the Salmon: Heat a non-stick skillet over medium heat and drizzle with olive oil. Place salmon fillets skin-side down and cook for 4-5 minutes until the skin is crisp. Flip the fillets, brush generously with the chipotle honey glaze, then cook for another 3-4 minutes or until the salmon flakes easily and is cooked through.
  3. Prepare the Rice and Vegetables: While the salmon cooks, fluff the cooked rice with a fork. Chop cherry tomatoes, cucumber, red onion, and cilantro. Toss these fresh ingredients with lime juice and olive oil in a large bowl to keep them crisp and flavorful.
  4. Assemble the Salad: Place a generous scoop of the rice-vegetable mixture on each plate or bowl. Carefully add the warm, glazed salmon on top. Drizzle any remaining chipotle honey glaze on the salmon for an extra burst of flavor.

Notes

  • Use fresh salmon for best flavor and texture.
  • Do not overcook the salmon; it should be slightly undercooked in the middle for juicy tenderness.
  • Adjust chipotle peppers to control spice level.
  • Cook rice and chop veggies ahead of time to save preparation time.
  • Allow the glaze to rest for a few minutes to deepen smoky-sweet flavors.
