Ingredients

Scale

Main Ingredients

  • 3 cups cooked chicken, shredded or cubed
  • 1 package (6-8 oz) cornbread or herb stuffing dressing mix
  • 1 to 1 ½ cups chicken broth
  • 1 cup sour cream or 1 can (10.5 oz) cream of chicken soup
  • 1 medium onion, finely chopped
  • 2 celery stalks, finely chopped
  • ¼ cup butter, melted
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper, to taste

Optional Variations

  • 1 cup cooked green beans, mushrooms, or carrots (for vegetable boost)
  • 1 cup shredded cheddar or mozzarella cheese (for cheesy twist)
  • 12 diced jalapeños or ¼ teaspoon cayenne pepper (for spicy kick)
  • Use gluten-free dressing mix and gluten-free chicken broth (for gluten-free version)
  • Fresh herbs such as rosemary, parsley, or tarragon (for herb variations)

Instructions

  1. Prepare the Ingredients: Shred or dice the cooked chicken. Finely chop the onion and celery. Melt the butter. Preheat the oven to 350°F (175°C).
  2. Combine the Filling: In a large bowl, mix the cooked chicken, chopped onion and celery, sour cream or cream of chicken soup, and half of the chicken broth. Season with salt, pepper, thyme, and sage, then stir until well combined and creamy. Add any optional ingredients if desired.
  3. Layer the Dressing: Grease a casserole dish. Pour half of the dressing mix into the bottom as a base layer. Spread the chicken mixture evenly over the dressing. Top with the remaining dressing mix. Drizzle the remaining chicken broth evenly over the top to maintain moisture during baking.
  4. Bake to Perfection: Cover the casserole with foil and bake in the preheated oven for 20 minutes. Remove the foil and continue baking for another 15 to 20 minutes or until the dressing topping is golden brown and the casserole is heated through.

Notes

  • Use leftover roasted or rotisserie chicken to save prep time and add flavor.
  • Don’t skip the chicken broth to keep the casserole moist and flavorful.
  • Cover the casserole with foil during the first half of baking to lock in moisture.
  • Let the casserole rest for 10-15 minutes after baking for easier serving.
  • Adjust seasonings gradually to balance flavors without overpowering the dish.
  • For an extra crispy topping, brush melted butter on top before baking and broil for the last 2-3 minutes, watching carefully.
