Instructions

  1. Preparing the Cherry Puree: Start by washing and pitting fresh cherries, then simmer gently until soft. Blend the cherries until smooth and strain to remove any solids, creating a silky puree that forms the fruity heart of the mousse.
  2. Blooming the Gelatin: Soak gelatin sheets or powder in cold water for 5-10 minutes until soft, ensuring the mousse will set with a delicate yet firm texture.
  3. Melting White Chocolate: Gently melt white chocolate over a double boiler or in short microwave bursts, stirring frequently to prevent burning and achieve a smooth consistency.
  4. Whipping the Cream: Whip heavy cream until soft, billowy peaks form; this whipped cream will lighten the mousse and provide its airy texture.
  5. Combining Ingredients: Warm the bloomed gelatin until fully dissolved, then mix it into the cherry puree and melted white chocolate blend. Carefully fold in the whipped cream to maintain airiness and uniform flavor.
