Instructions

  1. Prepare the Cheesecake Filling: In a medium bowl, combine the softened cream cheese, Greek yogurt, honey or maple syrup, and vanilla extract. Whisk thoroughly until smooth, creamy, and well blended to create a luscious base for the roll ups.
  2. Prepare the Fresh Fruit: Wash all fruits carefully. Peel and chop or slice fruits such as strawberries, kiwi, mango, and grapes into small, bite-sized pieces to ensure a balanced texture that won’t overpower or make the roll ups soggy.
  3. Assemble the Roll Ups: Lay a tortilla or crepe flat on a clean surface. Spread an even, generous layer of the cheesecake filling over the surface, leaving about a half-inch border around the edges. Sprinkle the prepared fresh fruits evenly on top of the filling. If using, add chopped nuts last for a crunchy contrast.
  4. Roll and Chill: Roll the tortilla or crepe tightly but gently from one end to the other to enclose the filling without squeezing it out. Wrap the rolled wrap in plastic wrap and place it in the refrigerator for at least 30 minutes to firm up and make slicing easier.
