Ingredients

Scale

Main Ingredients

  • 4 tbsp butter
  • 1/2 cup all-purpose flour (or gluten-free all-purpose flour blend for gluten-free option)
  • 3 large eggs
  • 1/2 cup milk
  • 1 cup freshly grated Gruyere cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp mustard powder (optional)

Instructions

  1. Prepare the dough base: Melt the butter in a saucepan over medium heat. Add the flour and stir constantly until the mixture forms a smooth dough that pulls away from the pan, about 1-2 minutes.
  2. Incorporate eggs and milk: Remove the dough from heat and let it cool slightly. Whisk in the eggs one at a time, fully incorporating each before adding the next. Gently stir in the milk until a smooth, thick batter is formed.
  3. Fold in the Gruyere cheese: Grate fresh Gruyere and fold it into the dough. Season with salt, pepper, and optional mustard powder. The cheese will melt during baking to create a crispy texture.
  4. Shape and bake the puffs: Using a spoon or piping bag, transfer the dough onto a parchment-lined baking sheet, spacing mounds evenly. Bake at 400°F (200°C) for 20-25 minutes until puffed and golden brown.
  5. Cool and serve: Allow the cheese puffs to cool slightly before serving to set and maximize crunchiness.

Notes

  • The dough should be thick but pipeable; add a splash more milk if too stiff.
  • Use freshly grated Gruyere cheese for best melt and flavor.
  • Avoid opening the oven door during the first 15 minutes to prevent collapsing puffs.
  • Use a piping bag for uniform size and attractive presentation.
  • Serve warm for the best taste and texture.
