Cheddar Bay Ground Beef Cobbler

Cheddar Bay Ground Beef Cobbler is a comforting and savory dish that combines tender ground beef filling with a fluffy, golden cheddar biscuit crust. Perfect for family dinners or casual gatherings, it offers rich flavors with simple ingredients and is easily customizable to suit dietary needs and preferences.

Ingredients

Scale

Ground Beef Filling

  • 1 lb ground beef
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • Salt and pepper, to taste
  • Optional herbs (fresh thyme or parsley), to taste
  • Optional veggies (bell peppers, mushrooms, spinach, carrots, or zucchini), diced

Biscuit Topping

  • 2 cups biscuit mix (Bisquick or gluten-free biscuit mix for gluten-free option)
  • 1 cup shredded sharp cheddar cheese (freshly grated recommended)
  • 1 cup milk or buttermilk
  • Butter, melted (for brushing on top)
  • Optional spices or herbs (e.g., cayenne, jalapeños for spicy twist)

Instructions

  1. Prepare the Ground Beef Filling: Brown the ground beef in a large skillet over medium heat, breaking it apart as it cooks. Add diced onions and minced garlic, cooking until soft and fragrant. Season with salt, pepper, and optional herbs. Pour in beef broth and stir to combine. Add any optional vegetables if desired. Remove from heat once filling is well mixed and moist.
  2. Mix the Biscuit Topping: In a mixing bowl, combine the biscuit mix with shredded cheddar cheese and any optional herbs or spices. Add milk or buttermilk and stir just until blended, keeping the batter slightly lumpy for a light and fluffy crust.
  3. Assemble the Cobbler: Grease a baking dish and transfer the beef filling evenly into it. Spoon dollops of the biscuit batter over the filling, not needing to cover completely as it will spread during baking.
  4. Bake Until Golden: Brush melted butter over the biscuit topping. Bake the cobbler in a preheated oven at 375°F (190°C) for 25–30 minutes or until the topping is puffed and golden brown.
  5. Let It Rest and Serve: Remove from the oven and let the cobbler cool for 5–10 minutes to allow flavors to settle and make portioning easier. Garnish with chopped green onions or parsley if desired and serve with side dishes or sauces.

Notes

  • Use freshly grated cheddar cheese for better melting and richer flavor.
  • Do not overmix the biscuit batter to keep it light and fluffy.
  • Drain excess fat after browning the beef to prevent a greasy filling.
  • Butter the baking dish well to prevent sticking and enhance flavor along the edges.
  • Add fresh herbs like thyme or parsley to brighten up the filling.
