Ingredients

Grits Base

  • Stone-ground grits – 1 cup
  • Sharp cheddar cheese – 1 cup shredded
  • Butter – 2 tbsp
  • Eggs – 2 large

Shrimp

  • Large shrimp, peeled and deveined – 12 oz
  • Cajun seasoning – 1 tbsp (adjust to taste)
  • Garlic – 2 cloves, minced
  • Olive oil or cooking oil – 1 tbsp (for sautéing)

Coating & Frying

  • Flour or cornmeal – ½ cup (for dredging)
  • Olive oil or cooking oil – enough for frying

Garnish

  • Green onions – 2 stalks, sliced

Instructions

  1. Prepare the Grits Base: Cook the stone-ground grits following package instructions until thick and creamy. Stir in sharp cheddar cheese and butter until melted and combined. Beat in eggs thoroughly to bind the mixture. Chill in the refrigerator until firm enough to handle.
  2. Season and Cook the Shrimp: Toss peeled and deveined shrimp with Cajun seasoning, minced garlic, and olive oil. Heat a pan over medium-high heat and sauté the shrimp until pink and slightly crispy on the edges, about 3-4 minutes. Remove from heat and allow to cool slightly.
  3. Assemble the Bites: Scoop a portion of the chilled grits mixture and flatten slightly in your hand or with a spoon. Place one cooked shrimp on top, then mold more grits around it to fully encase the shrimp, forming a compact bite-sized ball.
  4. Coat and Fry: Lightly dredge each assembled bite in flour or cornmeal, ensuring an even coating. Heat oil in a frying pan over medium heat. Fry the bites in batches, about 2-3 minutes per side, until golden brown and crispy. Drain on paper towels to remove excess oil.
  5. Garnish and Serve: Sprinkle the bites with sliced green onions and optionally smoked paprika or fresh herbs. Serve warm, paired with your favorite dipping sauce or enjoyed on their own.
