Instructions

In the same pot, add the onions, garlic, and green bell pepper. Cook until softened and aromatic, about 3-5 minutes.
  3. Build the Soup Base: Return the cooked sausage to the pot along with the diced potatoes. Sprinkle in the Cajun seasoning and stir well to coat all ingredients evenly. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and simmer until the potatoes are tender, approximately 15-20 minutes.
