Ingredients

Scale

Vegetables

  • 2 cups broccoli florets (fresh or frozen)
  • 2 large russet potatoes, peeled and diced
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced

Dairy & Fats

  • 3 tablespoons butter
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 1/2 cups milk or cream

Liquids

  • 4 cups chicken or vegetable broth

Other

  • 3 tablespoons all-purpose flour
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Vegetables: Wash the broccoli and chop into bite-sized florets. Peel and dice the potatoes into cubes. Finely chop the onion and mince the garlic to have all ingredients ready for smooth cooking.
  2. Sauté Onion and Garlic: Melt butter in a large pot over medium heat. Add the diced onions and cook until translucent, about 5 minutes. Add the minced garlic and sauté for 1-2 minutes until fragrant without browning.
  3. Make the Base: Sprinkle the flour over the onion and garlic mixture, stirring constantly to form a roux. Gradually whisk in the broth, ensuring the mixture is smooth and free of lumps.
  4. Cook Potatoes and Broccoli: Add the diced potatoes to the pot, bring to a boil, then reduce heat and simmer for about 15 minutes until potatoes are tender. Add broccoli florets and cook for an additional 5 minutes until bright green and tender.
  5. Blend Until Creamy: Use an immersion blender to puree part or all of the soup directly in the pot, achieving your preferred texture. Leaving some chunks adds heartiness and texture.
  6. Add Cheese and Milk: Reduce heat to low. Stir in shredded sharp cheddar cheese and milk or cream. Continue stirring gently until cheese melts completely and the soup becomes smooth and creamy. Season with salt and pepper to taste.

Notes

  • Use sharp cheddar cheese for optimal flavor and meltability.
  • Don’t overblend the soup; leaving some texture improves its rustic appeal.
  • Cut potatoes into uniform pieces to ensure even cooking.
  • Simmer gently after adding cheese to avoid curdling and maintain a smooth texture.
  • Fresh broccoli and quality broth enhance the final flavor noticeably.
