Ingredients

Scale

Rice

  • 2 cups day-old cooked rice, chilled

Vegetables

  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 1/4 cup chopped green onions

Protein

  • 1 cup diced chicken, shrimp, or scrambled eggs (choose one or mix)

Sauces & Oils

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cooking oil (vegetable or canola)

Aromatics & Seasonings

  • 2 cloves garlic, minced
  • Black pepper, to taste

Instructions

  1. Preheat the Blackstone Griddle: Turn your Blackstone griddle to medium-high heat and allow it to warm up fully — it should be hot enough to sizzle when you add the oil. This ensures your ingredients cook evenly and your rice achieves a perfect charred texture.
  2. Cook the Protein: Add a splash of cooking oil to the griddle and cook your selected protein (chicken, shrimp, or tofu) until just done. Remove and set aside to avoid overcooking while preparing the other ingredients.
  3. Sauté the Aromatics and Vegetables: In the same spot on the griddle, add the minced garlic and diced vegetables (carrots, peas). Stir frequently, cooking until the vegetables are tender but still vibrant and crisp.
  4. Add the Rice and Sauce: Break apart your chilled rice and add it to the griddle. Pour in soy sauce and sesame oil, then mix everything thoroughly. The high heat will slightly crisp the rice, giving a delicious crunchy texture.
  5. Combine All and Finish: Return the cooked protein to the griddle and fold it into the rice and vegetables. Adjust seasoning with salt, black pepper, or extra soy sauce to taste. Finish by sprinkling chopped green onions on top for fresh color and flavor.

Notes

  • Use day-old rice for drier, less sticky grains that prevent clumping while frying.
  • Preheat the griddle thoroughly for even cooking and crispy edges.
  • Cook ingredients in batches to avoid overcrowding and ensure proper browning.
  • Keep stirring constantly to prevent burning and evenly distribute heat and flavors.
  • Add fresh herbs and green onions just before serving for best texture and aroma.
