Biscoff Apple Crumble Cheesecake

Biscoff Apple Crumble Cheesecake is a decadent dessert combining the caramel-spiced crunch of Biscoff cookies, warm spiced apple crumble, and creamy cheesecake. Perfect for any occasion, it offers a delightful contrast of textures and flavors that make it a crowd-pleaser.

Ingredients

Scale

Crust

  • 200g Biscoff cookies (crushed)
  • 100g unsalted butter (melted)

Apple Crumble

  • 3 tart apples (peeled and diced, e.g., Granny Smith)
  • 3 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • Additional butter for sautéing (1 tbsp)

Cheesecake Filling

  • 450g cream cheese (room temperature)
  • 150g granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract

Topping

  • 50g Biscoff cookies (crumbled)
  • 1 tbsp butter (melted)

Instructions

  1. Prepare the Biscoff Crust: Crush the Biscoff cookies into fine crumbs. Mix with melted butter until fully combined, then press firmly into the base of a springform pan. Refrigerate to set while preparing the filling.
  2. Cook the Apple Crumble: Peel and dice the apples. Toss them with sugar and cinnamon. Sauté in butter over medium heat until tender and caramelized. Set aside to cool slightly before layering.
  3. Make the Cheesecake Filling: Beat the room temperature cream cheese until smooth. Gradually add sugar, eggs, and vanilla extract, mixing thoroughly to avoid lumps. Fold in the cooled apple crumble gently until combined.
  4. Assemble and Bake: Pour the cheesecake filling over the chilled crust and spread evenly. Prepare the topping by combining crumbled Biscoff cookies with melted butter and sprinkle it over the surface. Bake at 325°F (160°C) for 50-60 minutes until the center is set but still slightly wobbly.
  5. Chill and Serve: Allow the cheesecake to cool fully at room temperature, then refrigerate for at least 4 hours or overnight to achieve the perfect creamy texture.

Notes

  • Use room temperature cream cheese to ensure smooth mixing without lumps.
  • Do not overbake; a slight jiggle in the center indicates perfect doneness.
  • Chilling overnight improves flavor and texture.
  • Choose tart, firm apples like Granny Smith for the best crumble texture.
  • Press cookie crumbs firmly to prevent a crumbly crust when slicing.
