Baked Shrimp Toast

Baked Shrimp Toast is a quick and flavorful appetizer combining tender shrimp mixed with garlic, ginger, and soy sauce, spread over crispy white bread squares and baked to golden perfection. This crispy, savory snack is perfect for parties, light meals, or last-minute treats, delivering a delightful crunch and irresistible umami flavors while keeping it light with baking instead of frying.

Ingredients

Scale

Shrimp Mixture

  • 8 oz fresh shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 green onions, finely chopped
  • 1 tbsp soy sauce
  • 1 egg white
  • 1 tsp chili flakes or Sriracha (optional, for spicy kick)
  • 1 tbsp fresh cilantro or basil (optional, for herb infusion)

Bread & Toppings

  • 6 slices white bread (crusts trimmed)
  • 1 tbsp vegetable oil, for brushing
  • 1 tbsp sesame seeds (optional)
  • 1/4 cup shredded mozzarella or Parmesan cheese (optional, for cheesy variation)

Instructions

  1. Prepare the shrimp mixture: Finely chop the shrimp or pulse them a few times in a food processor until roughly minced. In a bowl, combine the shrimp with minced garlic, grated ginger, chopped green onions, soy sauce, egg white, and optional chili flakes or herbs. Mix thoroughly until sticky and well incorporated.
  2. Prepare the bread: Trim the crusts off the white bread slices to create neat squares. Lightly brush one side of each bread slice with vegetable oil to help achieve a golden, crispy texture when baked.
  3. Spread and top: Generously spread the shrimp mixture evenly on the oiled side of each bread square, pressing firmly so the topping adheres well. Optionally, sprinkle sesame seeds or cheese on top for extra crunch and flavor.
  4. Bake to perfection: Arrange the shrimp-topped bread squares on a lined baking sheet with shrimp side facing up. Bake in a preheated oven at 400°F (200°C) for 10-12 minutes or until the shrimp is cooked through and the bread edges turn golden and crisp.
  5. Serve and enjoy: Carefully transfer the baked shrimp toast to a serving plate. Serve hot and fresh, garnished with additional chopped green onions, a drizzle of soy or chili sauce, or toasted sesame seeds for an inviting finish.

Notes

  • Use fresh or fully thawed shrimp for best flavor and texture.
  • Slightly stale bread crisps better and absorbs less oil.
  • Spread the shrimp mixture evenly for uniform cooking.
  • Watch the toast closely during baking to prevent burning.
  • Serve immediately to keep the crunch intact.
  • Leftovers can be refrigerated for up to two days in an airtight container.
  • Reheat in an oven at 350°F (175°C) for 5-7 minutes to restore crispness; avoid microwaving.
  • For freezing, freeze unbaked shrimp-topped bread squares individually, then bake from frozen with extra cooking time.
