Ingredients

Scale

Meats

  • 8 slices of bacon, cooked and crumbled

Vegetables

  • 3 cups potatoes, diced (Yukon Gold or red potatoes recommended)

Egg Mixture

  • 8 large eggs
  • 1 cup milk or cream
  • Salt, to taste
  • Black pepper, to taste
  • Optional herbs (fresh thyme, rosemary, chives)

Cheese

  • 1 to cups shredded cheese (cheddar, feta, pepper jack, or a mix)

Instructions

  1. Prepare the Bacon and Potatoes: Cook the bacon until crisp and crumble into bite-sized pieces. Dice potatoes into small cubes and lightly sauté or parboil until just tender to ensure even baking and softness.
  2. Whisk Together Eggs and Dairy: In a large bowl, whisk eggs with milk or cream, salt, pepper, and any additional seasonings or herbs. This creates a fluffy, custard-like base.
  3. Layer Ingredients in Baking Dish: Grease a casserole dish and spread half of the cooked potatoes evenly. Add half of the crumbled bacon and sprinkle with half the cheese. Repeat layers with remaining potatoes, bacon, and cheese. Pour the egg mixture evenly over the entire dish.
  4. Bake Until Golden and Set: Bake at 350°F (175°C) for 35-40 minutes, or until the eggs are fully set, the top is golden, and the cheese is bubbling deliciously.
  5. Let It Rest Then Serve: Allow the casserole to cool for a few minutes before slicing to help it hold together and make serving easier.

Notes

  • Use day-old potatoes to help them hold their shape and reduce excess moisture.
  • Ensure bacon is cooked crisp for the best texture; soggy bacon can make the dish runny.
  • Whisk eggs gently to keep the casserole light and tender, avoiding a rubbery texture.
  • Use a nonstick or glass casserole dish to prevent sticking and promote even cooking.
  • Mixing two types of cheese adds depth and richness to the flavor.
